Parmesan Cheese On Pizza – Is It Good Or Is Mozzarella Better?

For the Dough

  • 5 cups all-purpose flour, divided
  • 1 cup Grated Parmesan
  • 1 teaspoon fast-rising dry yeast
  • ½ teaspoon salt
  • 2 cups cold water
  • ¼ cup olive oil or vegetable oil

For the Sauce

  • 1 cup Tomato Sauce
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp basil
  • 1 tsp sugar (optional)
  • salt and pepper to taste

For the Toppings

  • 2 cups Shredded Mozzarella
  • Pepperoni
  • 1 tablespoon Grated Parmesan


  1. Mix 4 cups of the flour with 1 cup of parmesan, your yeast, salt, water, and oil in the bowl. Stir until a soft dough forms. Dust your clean surface with flour then knead it into a ball. Gradually add the remaining flour. 
  2. Divide your dough into four pieces as each one will make a 12-inch pizza. Gently brush 1 dough ball with olive oil and cover loosely with plastic. Let it stand for 15-30 minutes. Store or freeze the other dough balls for later. 
  3. Preheat your oven to 400 °F. Make sure your oven is properly preheated before placing the pizza inside. Uncover your oiled dough and knead it into a 12-inch pizza. Bake the pizza for 6 minutes.
  4. Add your tomato sauce, mozzarella, remaining parmesan, and pepperoni. 
  5. Bake for 12-15 minutes, watching carefully. Make sure your cheese and crust doesn’t burn. Pizza is done when the edges are golden brown.
