  • 1 cup Arrowhead Mills Organic All-Purpose Flour
  • 1/2 cup cup Ghirardelli chocolate chips (preferably miniature if you can find ’em)
  • 1/2 cup chopped pecans
  • 1/2 cup Heath Toffee Bits or caramel baking chips
  • 2 tablespoons whole milk (can substitute with dairy free)

Instructions

  1. To begin, you’ll want to be sure to heat treat your flour to ensure that no unwanted bacteria is lurking in your dough. To do this, follow the steps mentioned in the segments above and be sure to allow the flour to cool completely before moving on to the next step.
  2. After your flour has cooled, mix together your butter and sugar until it forms a light and fluffy consistency.
  3. From here, add your vanilla and stir until well incorporated.
  4. Sift in your flour, cinnamon, and salt.
  5. Add your milk a tablespoon at a time until the cookie dough comes together. Be careful not to add too much as the cookie dough will become too thin and won’t have that rich cookie dough consistency you’re expecting.
  6. Fold in your chocolate chips, toffee (or caramel) bits, and chopped pecans.
  7. At this point, you can choose to chill your cookie dough in the form of cookie dough bites or chill the entire cookie dough as one large chunk. If you opt to chill your entire cookie dough without portioning it, be sure to use a cookie scoop to dip up the cookie dough when it comes time to eat. If you want to store the dough as cookie dough bites, use a tablespoon to scoop the dough before rolling it between the palms of your hands to form small gourmet cookie dough balls. Place them on a lined baking sheet.
