Starbucks Snowman Cookie – All About The Snowy Starbucks Snack + Recipe

Cookies

  • 2 cups of all-purpose flour
  • 5 ounces of white chocolate
  • 1 cup of butter, room temperature
  • 1 tablespoon of vanilla extract
  • ½ cup of powdered sugar
  • ½ tablespoon of baking powder
  • 1 large egg
  • ⅛ tsp cinnamon (optional-adds a warmer flavor to the cookie)
  • salt

Icing

  • 3 ounces of pasteurized egg whites
  • 1 tablespoon of peppermint extract
  • ½ tablespoon of vanilla extract
  • 4 cups of powdered sugar
  • gel food coloring (use whatever colors you wish for this part–the sky’s the limit!)

  • a snowman-shaped cookie cutter

Instructions

  1. We’ll start by preparing the shortbread. Put the white chocolate into a microwave-safe bowl. Melt the chocolate, carefully, in the microwave until just melted. Note: You can also do this over low heat on the stove.
  2. Beat the butter and sugar together with the melted chocolate using a mixer if you have one. Beat for 4-5 minutes until the ingredients have fully incorporated.
  3. Add your egg, vanilla, and the rest of the dry ingredients to the bowl. Mix until just combined. Do. not over mix!
  4. Take your freshly formed cookie dough and roll it out. The dough should be about a half-inch thick. Place the flattened dough into the refrigerator to help firm up the dough. This can make it much easier to work with.
  5. After the dough is finished chilling, cut the dough into cookie shapes using the snowman mold. You could also cut other cookie shapes, but for the purposes of this article, we’ll focus on snowman shapes!
  6. Preheat your oven to 350 degrees F. Place all the snowman shapes onto a parchment-lined cookie sheet. Be sure not to overcrowd your pan. Cook in two batches if needed.
  7. Bake the cookies for about 10 minutes. Be sure to cool the cookies completely to keep the icing from melting off once applied.
  8. As your cookies are cooling, begin to make your icing. Beat your egg whites until they begin to get fluffy. Add your peppermint and vanilla extract. Continue to beat until stiff peaks form.
  9. Slowly, carefully, and only a little at a time, add your powdered sugar to the egg whites. Be sure to mix each little bit in properly to ensure the right consistency. The icing will become smooth and shiny when done correctly.
  10. Separate your icing into smaller bowls and color the icing as you desire. Use the colored icing to make your snowman come alive. Of course, to emulate Starbucks snowmen, you’ll want to use white for the body, black for the nose, eyes, and mouth, and varying colors for the accessories.

Notes

  • You may also make a large ball out of the cookie dough and wrap it in plastic wrap to keep it from drying out. After it has chilled an hour, go ahead and roll it back out into a half-inch thickness.
