Seafood Paella

Recipe

Ingredients

(Serves 8-10)

  • 3 cups short-grain rice (preferably Spanish bomba or Calasparra rice)
  • 6 cups fish or seafood stock
  • 1 large pinch of saffron threads
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup chopped tomatoes
  • 7 oz (200g) chorizo, sliced
  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 lb (450g) mussels, cleaned
  • 1 lb (450g) small clams, cleaned
  • 1 cup frozen peas
  • 1 lemon, cut into wedges
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Steps

  1. In a small bowl, crush the saffron threads and mix with 1/4 cup of hot stock. Let it steep for 15 minutes.
  2. Heat the olive oil in a large paella pan or wide, shallow skillet over medium heat.
  3. Add the chorizo and cook until it releases its oils and begins to crisp, about 5 minutes. Remove and set aside.
  4. In the same pan, sauté the onion, garlic, and bell pepper until softened, about 5 minutes.
  5. Add the chopped tomatoes and cook for another 5 minutes until they break down slightly.
  6. Stir in the rice, coating it with the vegetable mixture. Toast for 1-2 minutes.
  7. Pour in the remaining stock and the saffron mixture. Bring to a boil, then reduce heat to low. Simmer uncovered for about 15 minutes, stirring occasionally.
  8. Add the chorizo back to the pan along with the shrimp, mussels, and clams. Gently press them into the rice.
  9. Sprinkle the peas over the top.
  10. Continue cooking without stirring for another 10-15 minutes, or until the rice is tender and the seafood is cooked through. The mussels and clams should open (discard any that don’t).
  11. Remove from heat and let stand, covered with a clean kitchen towel, for 5 minutes.
  12. Garnish with lemon wedges and chopped parsley before serving.

Tips and Tricks

  1. The right rice: Use short-grain rice for authentic texture. Spanish bomba or Calasparra rice are ideal, but Arborio can work in a pinch.
  2. Don’t stir too much: Unlike risotto, paella should not be stirred constantly. This allows the coveted crispy bottom layer (socarrat) to form.
  3. Pan matters: A wide, shallow pan is crucial for proper evaporation and rice cooking. If you don’t have a paella pan, use the widest skillet you have.
  4. Prep ahead: Have all ingredients measured and prepped before you start cooking. Paella comes together quickly once you begin.
  5. Stock temperature: Keep your stock hot (but not boiling) as you add it to the rice. This maintains the cooking temperature and helps the rice cook evenly.
  6. Seafood timing: Add the seafood towards the end of cooking to prevent overcooking.
  7. Let it rest: The resting time at the end is crucial for the final texture of the dish.

How to Serve

Serving paella is all about presentation and creating a communal dining experience:

  1. Bring the entire paella pan to the table for a dramatic presentation. The colorful array of ingredients makes for a stunning centerpiece.
  2. Provide lemon wedges on the side for guests to squeeze over their portions as desired.
  3. Serve with crusty bread to soak up the flavorful juices.
  4. Pair with a crisp Spanish white wine like Albariño or a light red like Tempranillo.
  5. For a complete Spanish-inspired feast, consider serving alongside:
    • A simple green salad with a sherry vinaigrette
    • Marinated olives
    • Spanish cheese and cured meats as appetizers
    • Flan or crema catalana for dessert
  6. Encourage guests to serve themselves directly from the pan for a casual, family-style meal.
  7. Provide small bowls for discarding mussels and clam shells.

Holiday Paella: A Tasty Spanish Surprise

Seafood paella is a tasty change from normal holiday food. You can swap out seafood for veggies, chicken, or rabbit, but keep the yellow rice. It’s easier to make because you only use one pan, so you can spend more time with guests. Serving paella in its big, flat pan lets people help themselves: this makes for a laid-back meal where everyone can talk and enjoy the holiday together.
