Making perfect sugar cookie dough is easy when you follow this simple recipe.


  • 2 1⁄2 cups all-purpose flour
  • 1 cup butter, softened
  • 1 cup white granulated sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract


  1. Start by allowing 1 cup of butter to soften to room temperature.
  2. Next, pour 1 cup of granulated white sugar into the bowl of a stand mixer fitted with the paddle attachment.
  3. Beat the butter and sugar on medium-high speed for 3-4 minutes until light and fluffy with a creamy consistency.
  4. With the mixer running on medium speed, add the eggs one at a time, allowing each egg to fully incorporate before adding the next.
  5. After scraping down the sides of the bowl, beat for another minute to create a smooth, homogenous liquid batter.
  6. First, use a teaspoon to stir in pure vanilla extract until evenly distributed throughout the batter for a sweet aromatic flavor.
  7. Next, with the mixer on low speed, slowly pour in 2 1⁄2 cups of sifted all-purpose flour. Beat just until combined then stop mixing before overworking the dough.
  8. Lightly flour a clean countertop before dumping out the dough. Knead several times to bring it all together into a uniform mass. The dough will feel thick and dense at this stage. Resist adding more flour as that leads to dry, cakey cookies.
  9. Form the dough into two equal disks, working it as little as possible to prevent overworking. Smooth any cracks in the top. 
  10. Wrap the dough disks individually in plastic wrap then refrigerate for at least 2 hours and up to 2 days.
