Herb-covered salmon is a lighter but still fancy choice instead of normal holiday meats. It mixes the rich, healthy salmon with a crunchy, tasty herb coating, giving you different textures and flavors. Salmon also cooks faster, so you can spend less time cooking and more time with your guests.

Recipe
Ingredients
(Serves 6-8)
- 2 lbs (900g) salmon fillet, skin on
- 1 cup fresh breadcrumbs
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh dill, finely chopped
- 2 tablespoons fresh thyme leaves
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons Dijon mustard
- Salt and freshly ground black pepper
- Lemon wedges for serving
Steps
- Preheat your oven to 400°F (200°C).
- In a medium bowl, mix together the breadcrumbs, parsley, dill, thyme, lemon zest, and minced garlic.
- Drizzle in 3 tablespoons of olive oil and mix until the breadcrumbs are evenly moistened. Season with salt and pepper to taste.
- Place the salmon fillet, skin-side down, on a baking sheet lined with parchment paper.
- Brush the top and sides of the salmon with Dijon mustard.
- Press the herb breadcrumb mixture evenly over the top of the salmon, covering it completely.
- Drizzle the remaining tablespoon of olive oil over the top of the breadcrumbs.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is just cooked through and the crust is golden brown.
- To check for doneness, insert a fork into the thickest part of the fillet. It should flake easily but still be slightly translucent in the center.
- Let the salmon rest for 5 minutes before serving.
- Serve with lemon wedges on the side.
Tips and Tricks
- Choose the right salmon: Look for a center-cut piece of salmon that’s even in thickness to ensure uniform cooking.
- Don’t overcook: Salmon can quickly go from perfectly cooked to dry. It’s better to slightly undercook as it will continue to cook while resting.
- Make ahead: You can prepare the herb crust mixture in advance and refrigerate until ready to use.
- Fresh herbs matter: While dried herbs can work in a pinch, fresh herbs will give you the best flavor and appearance.
- Breadcrumb alternatives: For a gluten-free version, you can use crushed nuts (like almonds or pistachios) instead of breadcrumbs.
- Even coating: Press the herb mixture gently but firmly onto the salmon to ensure it adheres well during cooking.
- Cooking for a crowd: If cooking for a larger group, you can use individual salmon fillets instead of one large piece, adjusting cooking time accordingly.
How to Serve
Presenting herb-crusted salmon can be both elegant and simple:
- If you’ve cooked a whole side of salmon, bring it to the table on a large platter for a dramatic presentation.
- Garnish the platter with fresh herb sprigs and lemon wedges for both decoration and functionality.
- For individual portions, use a sharp knife to cut the salmon into serving-sized pieces, being careful not to disturb the herb crust.
- Serve alongside complementary side dishes such as:
- Roasted asparagus or green beans
- Lemon-herb roasted potatoes
- A light salad with a citrus vinaigrette
- Steamed wild rice or quinoa pilaf
- Offer additional sauces on the side, such as:
- Lemon-dill yogurt sauce
- Honey-mustard drizzle
- Light beurre blanc
- Pair with a crisp white wine like Sauvignon Blanc or a light-bodied Pinot Noir.
- For a festive touch, consider serving on a bed of wilted spinach or kale, which adds both color and nutrition to the plate.
A Festive Feast Made Simple
Herb-crusted salmon combines elegance with simplicity, making it great for holiday meals. Its green herb crust and pink salmon look festive on any table. The dish offers a mix of flavors and textures and is easy to make, taking less than 30 minutes. And get this – it’s actually good for you too! Salmon is packed with healthy omega-3s and protein. So you can feel great about serving a delicious meal that’s also kinda nutritious. How cool is that for a holiday dinner?
