I know, I know – another gluten-free cookie recipe that’ll turn into a hockey puck by tomorrow? But actually, this isn’t that! After countless tests (and maybe a few sugar-induced late nights), I’ve cracked the code to creating gluten-free snickerdoodles that stay wonderfully soft and tender for days. The secret? A magical combination of sweet rice flour, almond flour, and a touch of cream cheese that keeps these cookies perfectly chewy.
These aren’t just good “for gluten-free cookies” – they’re spectacular cookies, period. The classic cinnamon-sugar coating gets a subtle upgrade with a whisper of cardamom, adding just enough intrigue to make people ask, “What’s that amazing flavor?” Trust me, these will be the star of your next cookie swap, and no one will believe they’re gluten-free!

Why This Recipe Works
- Sweet rice flour provides structure and helps retain moisture
- Almond flour adds richness and prevents the dreaded sandy texture
- Cream cheese creates tenderness that lasts for days
- Cream of tartar gives that classic snickerdoodle tang (don’t skip it!)
- The cardamom-cinnamon sugar coating adds sophisticated flavor

The Recipe
Recipe Notes
- Yield: About 24 cookies
- Prep Time: 20 minutes (plus 30 minutes chilling)
- Cook Time: 11-13 minutes per batch
- Total Time: About 1 hour
Ingredients
For the Cookies
- 1½ cups sweet rice flour
- 1 cup almond flour
- ½ teaspoon xanthan gum
- 1 teaspoon cream of tartar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 2 oz cream cheese, softened
- ¾ cup granulated sugar
- ¼ cup light brown sugar
- 1 large egg
- 1½ teaspoons vanilla extract
For the Coating
- ¼ cup granulated sugar
- 1½ teaspoons ground cinnamon
- ⅛ teaspoon ground cardamom (optional but recommended)
Making Your Snickerdoodles
- In a medium bowl, whisk together sweet rice flour, almond flour, xanthan gum, cream of tartar, baking soda, and salt. Set aside.
- In a large bowl using an electric mixer, cream together butter, cream cheese, and both sugars until light and fluffy, about 3 minutes. Don’t skimp on this step!
- Beat in egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.
- Gradually mix in the dry ingredients until just combined. The dough will be soft but not sticky.
- Cover and chill dough for at least 30 minutes (or up to 24 hours).
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix coating ingredients in a small bowl.
- Roll dough into 1½-inch balls, then roll in the cinnamon-sugar mixture until well coated.
- Place cookies 2 inches apart on prepared baking sheets.
- Bake for 11-13 minutes, or until edges are just set but centers still look slightly soft. They’ll continue to set as they cool.
- Let cool on baking sheets for 10 minutes before transferring to a wire rack.

How to Store
These cookies stay fresh in an airtight container at room temperature for up to 5 days. They can also be frozen for up to 3 months – perfect for emergency cookie cravings!
The dough can be refrigerated for up to 3 days or frozen for up to 1 month.
More Tips!
- Room temperature ingredients are crucial! Take your butter, cream cheese, and eggs out at least an hour before baking.
- Don’t skip the 30-minute chill time – it prevents spreading and intensifies the flavors.
- Use a cookie scoop if you have one – it ensures even baking and that perfect round shape.
- Let them cool completely on the baking sheet – they’ll continue to set up perfectly.
- If your cookies spread too much, chill the dough longer or add 2-3 tablespoons more sweet rice flour.
- If they’re too puffy, gently tap the baking sheet on the counter right after taking them out of the oven.
- For extra softness, add ¼ teaspoon of baking powder to the dry ingredients.
