In the Philippines, one of the most beloved Christmas traditions is indulging in the warm, comforting pleasure of fresh bibingka. This traditional rice cake, with its unique blend of sweet and savory flavors, has been gracing Filipino breakfast tables during the holiday season for generations. It’s so good that you should try making it immediately and see for yourself.

A Savory Christmas Tradition
Walking through the streets of the Philippines during the Christmas season, you’ll be greeted by the intoxicating aroma of bibingka baking in clay ovens outside churches.
This beloved treat is intrinsically linked to Simbang Gabi, the nine-day series of pre-dawn masses leading up to Christmas.
As worshippers exit the church, they’re greeted by vendors selling freshly baked bibingka, creating a morning ritual that combines spiritual devotion with culinary delight.

What Makes Bibingka Special?
Bibingka isn’t just another rice cake – it’s actually beautiful marriage of textures and flavors.
The combination of rice flour and coconut milk creates a tender, slightly chewy texture, while the banana leaves it’s cooked in impart a subtle, distinctive aroma.
When topped with salted egg, grated coconut, and a generous brush of butter, it becomes a perfect balance of sweet, salty, and rich flavors.
It might not sound like a typical dessert because it’s more savory, but it’s absolutely delicious!
How is Bibingka Made?
Traditionally, bibingka is cooked in special clay ovens with heat sources both above and below the cake.
While these methods create the most authentic version, I’m excited to share a recipe adapted for modern home ovens that still captures the essence of this beloved treat.

Recipe Notes and Tips
- Bibingka is best enjoyed fresh and warm
- While it can be stored at room temperature for up to 24 hours, reheating will never quite capture the magic of fresh-from-the-oven bibingka
- If banana leaves aren’t available, parchment paper will work, though you’ll miss out on the traditional aroma
- Look for rice flour specifically, not glutinous rice flour
- The salted eggs can be found in Asian markets, but if unavailable, the bibingka will still be delicious without them
- The cake should be slightly springy when done, with a golden brown top
