Cauliflower Gratin

Recipe

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup Gruyere cheese, grated and divided
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 cup seasoned breadcrumbs
  • 1/4 teaspoon freshly grated nutmeg
  • Salt and white pepper to taste
  • 2 tablespoons fresh thyme leaves
  • 2 cloves garlic, minced

Steps

  1. Preheat your oven to 375°F (190°C) and butter a 9×13 inch baking dish.
  2. Bring a large pot of salted water to boil. Add cauliflower florets and cook for 5-7 minutes until just tender when pierced with a fork. Drain well and pat dry with paper towels.
  3. For the cheese sauce:
    • Melt butter in a medium saucepan over medium heat
    • Add garlic and cook until fragrant, about 1 minute
    • Whisk in flour and cook for 2 minutes, stirring constantly
    • Gradually add warm milk, whisking continuously to prevent lumps
    • Cook until sauce thickens, about 5 minutes
    • Remove from heat and stir in half the Gruyere and all the Parmesan
    • Season with nutmeg, salt, and white pepper
  4. Arrange the blanched cauliflower in the prepared baking dish.
  5. Pour the cheese sauce evenly over the cauliflower.
  6. Combine remaining Gruyere with breadcrumbs and sprinkle over the top.
  7. Bake for 25-30 minutes until bubbly and golden brown.
  8. Let rest for 5 minutes before serving.

Tips and Tricks

  • Don’t overcook the cauliflower during blanching – it will continue to cook in the oven
  • Warming the milk before adding it to the roux prevents lumps and speeds up the process
  • For extra flavor, try smoking the cauliflower before assembling the gratin
  • Make sure to thoroughly drain the cauliflower to prevent a watery gratin
  • For a crispy top, broil for the final 2-3 minutes, watching carefully to prevent burning
  • Use freshly grated cheese for the best melting properties and flavor

How to Serve

Serve this luxurious gratin straight from the oven while the cheese sauce is bubbling and the top is perfectly crispy. It makes an excellent side dish for roasted meats, particularly ham or beef tenderloin. For a vegetarian main course, pair it with a crisp green salad and crusty bread. Garnish with fresh thyme leaves and a sprinkle of cracked black pepper just before serving. This dish is perfect for holiday meals, dinner parties, or any occasion that calls for something special.

A New Family Favorite

This cauliflower gratin shows you can make healthier versions of classic dishes that taste just as good as the originals. The recipe uses traditional French cooking methods but with ingredients that are better for you, making it a dish that everyone will enjoy. You can serve it as a side dish with meat or as a vegetarian main course – either way, once you try it, you’ll want to make it again and again. It’s the perfect combination of cozy comfort food and good nutrition.
