The same goes for coconut milk – you might really taste the coconut in the dish! If this sounds like your thing, go for it–otherwise, you may wish to steer clear of using dairy-free milks in mac and cheese.
Note: Soya milk, although sweet, has a more neutral flavor than coconut or almond milk. Because of this, you may be able to get away with substituting almond milk for your mac and cheese without much of a weird aftertaste.
