This recipe transforms a 3-ounce beef tenderloin into a golden-crusted masterpiece, perfect for special occasions or when you want to treat yourself.

Beef Wellington For One

Ingredients

Main Components:

  • 3-ounce beef tenderloin
  • 1/4 sheet puff pastry, thawed
  • 1 slice prosciutto
  • 1 teaspoon Dijon mustard
  • 1 small egg, beaten (you’ll use about 1 tablespoon)

Mushroom Duxelles:

  • 3 ounces mushrooms, finely chopped
  • 1/4 shallot, minced
  • 1 small garlic clove, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon butter
  • Salt and pepper to taste

Note: Store remaining puff pastry and egg wash properly for future use.

Steps

Prepare the Duxelles (25 minutes):

  • Heat a stainless steel or non-stick pan over medium heat. Add butter and wait until it’s fully melted and starting to foam.
  • Add minced shallots and garlic. Cook for 2-3 minutes until translucent but not browned, stirring occasionally.
  • Add finely chopped mushrooms and fresh thyme leaves. The mushrooms should be almost paste-like in consistency.
  • Reduce heat to medium-low. Cook for 15-20 minutes, stirring every few minutes. The mixture will release liquid, and then slowly dry out.
  • The duxelles is ready when it’s dark brown and concentrated, and no liquid remains when pressed with a spoon.
  • Season with salt and pepper, then spread on a plate to cool completely (about 20 minutes).

Prepare the Beef (15 minutes):

  • Remove tenderloin from the refrigerator 30 minutes before cooking.
  • Pat dry with paper towels. Season generously with salt and freshly ground pepper on all sides.
  • Heat a heavy-bottomed pan until smoking hot. Add a thin layer of high-heat oil.
  • Sear the beef for exactly 90 seconds per side, including the ends, until uniformly browned.
  • Remove from heat, brush immediately with Dijon mustard while hot.
  • Place on a plate and refrigerate for 10 minutes to stop the cooking process.

Initial Assembly (10 minutes):

  • Lay a 12-inch piece of plastic wrap on your work surface.
  • Place prosciutto slice down, slightly overlapping if using multiple pieces.
  • Using an offset spatula, spread cooled duxelles in a thin, even layer over the prosciutto.
  • Position the mustard-coated beef in the center.
  • Using plastic wrap as a guide, roll tightly, tucking in the ends.
  • Twist the ends of the plastic wrap tightly to form a uniform cylinder.
  • Refrigerate for 30 minutes minimum, up to 24 hours.

Final Assembly and Baking (35 minutes):

  • Preheat oven to 400°F with rack in center position.
  • Roll puff pastry on a lightly floured surface to 1/8-inch thickness.
  • Remove plastic wrap from beef. Center on pastry.
  • Fold pastry ends over beef first, then sides, sealing with water.
  • Place seam-side down on the parchment-lined baking sheet.
  • Brush the entire surface with a beaten egg. Create steam vents.
  • Score diagonal lines in a decorative pattern, careful not to cut through.
  • Bake 20-25 minutes until golden brown and internal temperature reaches 125°F.
  • Rest 10 minutes before serving.

Tips and Tricks

  • Ensure all components are cold before assembly to prevent the pastry from becoming soggy
  • Pat mushrooms dry before chopping to reduce moisture
  • Make clean cuts when scoring the pastry for the best appearance
  • Use a meat thermometer for precise cooking
  • Let the Wellington rest for 10 minutes before cutting
  • Prepare components ahead for easier assembly
