Ingredients

For the Tenderloin

  • 1 (4-5 lb) beef tenderloin, trimmed
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons Dijon mustard
  • 2 tablespoons black peppercorns, coarsely ground
  • 2 tablespoons kosher salt

For the Red Wine Sauce

  • 2 shallots, finely minced
  • 2 cups good-quality red wine
  • 2 cups beef stock
  • 4 tablespoons cold butter
  • Salt and pepper to taste

How to Make

  1. Remove the tenderloin from the refrigerator 2 hours before cooking to bring it to room temperature. Pat dry with paper towels.
  2. Preheat your oven to 425°F (220°C).
  3. In a small bowl, combine minced garlic, rosemary, thyme, and 2 tablespoons olive oil to make a paste.
  4. Brush the tenderloin with Dijon mustard, then coat evenly with the herb paste. Season generously with ground peppercorns and salt, pressing to adhere.
  5. Heat remaining olive oil in a large ovenproof skillet over medium-high heat. Sear the tenderloin on all sides until nicely browned, about 8-10 minutes total.
  6. Transfer the skillet to the preheated oven and roast until a meat thermometer registers 125°F (52°C) for medium-rare, about 25-30 minutes.
  7. Remove from oven, transfer to a cutting board, and tent loosely with foil. Let rest for 15-20 minutes before slicing.

For the Red Wine Sauce

  1. While the meat rests, place the skillet over medium heat (careful, the handle will be hot!).
  2. Add shallots and cook until softened, about 2 minutes.
  3. Add wine and scrape up any browned bits from the bottom of the pan.
  4. Simmer until reduced by half, then add beef stock and reduce again by half.
  5. Remove from heat and whisk in cold butter, one tablespoon at a time. Season with salt and pepper.
